Fruit taco pancakes
Servings: 10 pancakes
Ingredients:
1 cup (200 g) Cora waffle/pancake mix
1 cup (250 ml) water
2 tbsp. (30 ml) melted butter or vegetable oil
4/5 cups (200 ml) raspberries
4/5 cups (200 ml) blueberries
4/5 cups (200 ml) chopped kiwi
2/3 cup (150 ml) Nutella-style spread
Garnish: none
Preparation:
- Lightly oil a non-stick pan and heat over medium high.
- Vigorously whisk together the batter and water. Add the butter or oil and mix until smooth.
- Add ¼ cup (60 ml) of the batter to the centre of the pan. Flip over when the top is nearly cooked through.
- Continue cooking until nice and golden. Repeat Steps 3 and 4 with remaining batter.
- Place cooked pancakes on a work surface and place 1 tbsp. of Nutella-style spread in the centre of each one, spreading along the centre from top to bottom.
- Garnish the pancakes with the fresh fruit. Serve like a taco.
